Basic Tomato Sauce Pasta

A classic recipe for an inexpensive meal.
1 Tbsp olive oil 1 large onion (chopped) 2 stalks celery (chopped) 3 cloves garlic (chopped) 1 can of peeled plum tomatoes (I prefer to use Cirio) 2 Tbsp tomato paste 1/2 tsp dried oregano 2 bay leafs 1 tsp brown sugar Crushed black pepper 2 shots of white wine Sea salt to taste Heat oil in pan and pour in the chopped ingredients until softens. Add tomatoes, oregano, bay leaf, sugar and bring to boil, lower heat and simmer for 40 minutes. Stirring from time to time to avoid burning. (Make sure to use a pot or pan with lid that does not allow much room for evaporation) When almost ready, pour in the wine and add pepper and salt to taste.
